The arrival of today’s blue sky day (with 80 degrees in the forecast) couldn’t have had better timing.
I just finished a week of cooking classes and I’m pretty sure I will spend a good part of this afternoon in our backyard in the hammock with a book in my hands, and our 2 labradoodles~
and…
It’s a good day off kind of day, and what will make it even better, is that when 5 o’clock rolls around, I will tackle my thirst with one of these citrus inspired grapefruit martinis. Ice cold, clean, and crisp; a fine Friday evening cocktail I think you too would enjoy.

Grapefruit Martini (Makes 2)
1/4 cup ruby red vodka
1/4 cup vodka
1/4 cup fresh lime juice
2 tablespoons simple syrup (recipe below)
Ice Cubes
2 lime slices
Place first 4 ingredients in cocktail shaker; fill with ice. Cover and shake quickly and vigorously for 8 seconds. Strain into 2 Martini glasses. Garnish with lime slices.
To prepare the simple syrup
Stir 2 tablespoons sugar and 2 tablespoons water in small saucepan over low heat until sugar dissolves. Bring to boil; cool.

I can’t get enough grapefruit these days, and now that the sun has returned, this will be the perfect drink to kick off the weekend! I’m already counting down…three more days!
I love the grapefruit martini. I usually garnish mine with a slice of crystallized ginger. It adds to the flavor of the drink and is excellent to eat after it soaks for a while.
